Characteristic of olive trees are their gnarled, deeply grooved trunks and lush, silvery crowns. Young olive trees have smooth, grey trunks, but each year the trunk becomes darker, more knotted, and more twisted. The leaves are evergreen and are renewed every three years.

 

The leaves have a leathery texture and resemble willow leaves in shape and size. They are covered with fine hairs on the underside and have a silvery grey color. From April to June, small white blossoms appear in clusters on the branches of the olive tree. These blossoms emit a sweet and pleasant fragrance. The fruit of the olive tree is a stone fruit resembling a plum, with a thin skin and flesh that is extremely rich in oil.
